  • 1 jalapeño, seeds and ribs removed, roughly chopped
  • 1/4 cup fresh lime juice (about 2 limes)
  • 3 tablespoons agave syrup or honey, more to taste
  • 1/4 teaspoon fine sea salt (for the mix)
  • Flaky sea salt, for rimming glasses
  • Ice, for serving
  • Thin jalapeño rings and pineapple wedges, for garnish

Instructions

  1. Add the pineapple, water, chopped jalapeño, lime juice, agave, and fine sea salt to a blender.
  2. Blend on high for 45 to 60 seconds, until completely smooth.
  3. Taste. If it needs more sweetness, add another tablespoon of agave and blend again briefly.
  4. Strain the mixture through a fine mesh sieve into a large pitcher, pressing on the solids with a spoon to extract all the liquid. Discard the pulp left behind.
  5. Run a lime wedge around the rim of each glass, then dip the rim in flaky sea salt.
  6. Fill glasses with ice, pour the agua fresca over the top, and garnish with a jalapeño ring and a small pineapple wedge.
  7. Serve immediately, or refrigerate the strained mixture for up to 3 days.
